It’s Almost Mother’s Day –Bouquet of Collards Anyone?

So, want to impress that special woman, cousin, best friend, neighbor, etc this Mother’s Day?

Cook a pot of collard greens with FLAVOR.

You can still buy her a nice floral bouquet, but, a bouquet of collard greens would be a unique and health conscious way to tell that special woman that you appreciate her!

Collard greens can be made into a hearty or lite snack, depending on the ingredients that are added into them while they are in the cooking process.

Collard greens are a type of wild cabbage that has origins are in the Eastern Mediterranean (think Tunisia, Yemen and Cyprus).

Collards are dark green and leafy and loaded with nutrients (ex: Vitamin B-12, calcium, iron, magnesium, choline and Vitamin A). They are also low in calories (without any additional ingredients, a cup of chopped collard greens is less than 15 calories)!

Another tidbit is that cruciferous vegetables, which collard greens are, provide cancer-fighting benefits.

To prepare collards you want to first…

Inspect your collard green leaves and remove any parts that may be “going rogue”.
You will roll the leaves of your collards very tightly and …

Then…

Cut them vertically into small strips.
Make sure to clean your greens with alkaline water and wipe them down to ensure that your collards are clean. **I usually place green in a pot to boil off any dirt or debris**.

After removing any debris from your collard greens and preparing them for cooking, you will want to fill a clean pot with your clean collards and clean, alkaline water.

You can add flavor to your collard greens with simple, inexpensive, yet yummy ingredients.

I first use a little apple cider vinegar to help tenderize the collard green leaves and to add flavor.

I used a seasoning called Flavor God, which works wonders with no additional calories.

Of course, I used a tablespoon of ghee.

Now I could have added a piece of cooked bacon or smoked turkey to the mix for more flavor, but I didn’t THIS time.

You can either cook your collard greens in a stock pot for about two hours or you can opt for the slow cooker option, which can take 4 – 6 hours, depending on your life schedule.
